The halal status of gelling agents depends on their source. Gelatin, which is derived from animal bones and skins, is haram if sourced from pork or improperly slaughtered cattle. Halal gelatin must come from animals slaughtered according to Islamic law. Plant-based gelling agents like pectin, carrageenan, and Gellan Gum E418 are generally halal. Gellan Gum E418 is a polysaccharide manufactured from corn and other crops and is recognized as halal and vegan. Carrageenan, derived from algae, is permissible as long as it is not harmful.
